The latest ZWiki implements page history & diffs, but I don't know if
there's a public instance anywhere.
Canonical Wikis have a "RecentChanges" page which lists what pages
have been edited & when.
Keeping track of changes can be hard, we use editing conventions to
help this - comments are appended and an owner helps
organize/assimilate.
